Roasted Beets with Feta

Adapted from The Food Network Magazine

  1. Preheat over to 450 degrees F.
  2. Peel 4 medium beets and cut into 1/2-inch pieces. Toss with 1 tablespoon olive oil, 1 teaspoon salt, and pepper to taste on a baking sheet.
  3. Place baking sheet in oven and roast until tender, about 35 minutes. Stir midway through roasting.
  4. Remove from oven and transfer beets to a bowl. Toss with 4 chopped scallions and 2 teaspoons lemon juice. Top with crumbled feta and serve.
